Whatever happened to quiche? There was a time when quiche was everywhere.
In the 1980s and 90s, you could find a slice of quiche on restaurant menus, at ladies’ luncheons, church brunches, baby showers, and nearly every neighborhood gathering. It was elegant enough for company but simple enough for home cooks. Then, somewhere along the way, quiche quietly disappeared from the spotlight.
Quiche deserves a comeback because it checks all the boxes for today’s busy cooks. It’s easy to make, incredibly versatile, reheats beautifully, and can serve as breakfast, brunch, lunch, or even a light dinner. In an age of meal prep and make-ahead meals, quiche may actually be more relevant than ever.
This Easy Bacon & Swiss Quiche comes together in minutes using a frozen pie crust and a handful of ingredients. The combination of smoky bacon, nutty Swiss cheese, Parmesan, and green onions creates a rich, savory flavor that tastes like you spent far more time in the kitchen than you actually did.
The best part? Breakfast is ready for the week.
Try baking this quiche on Sunday afternoon and slicing it into individual servings. A quick trip through the microwave provides a hot breakfast that’s much more satisfying than a drive-thru breakfast sandwich. Pair it with fresh fruit, and you’ve got a meal that feels a little special, even on a busy weekday morning.
Let’s give quiche the comeback it deserves. One bite of this Easy Bacon & Swiss Quiche, and you’ll wonder why it ever left the menu in the first place.
