Strawberries show up in far more ways than most people realize—easily dozens of uses across sweet and savory cooking. While it’s hard to pin down an exact number, you can think of them in 8 major categories, each with multiple variations:
- Fresh and simple sliced for snacks, fruit salad and toppings
- Baked in cakes, muffins, pies and more.
- Desserts like ice cream, cheesecake, chocolate dipped, and more.
- Preserves and spreads like jam, jelly, compotes and sauces.
- Beverages, sauces, dressings and frozen foods, all find strawberries a delish main ingredient.
Today, we share one of the baked dishes featuring this fruit, which is on its way to being fresh off the vine, bringing springtime freshness.
Strawberry Cake
Preheat oven to 350°F
Ingredients
- 1 box white cake mix
- ¼ cup cake flour (sifted)
- 1-3 oz strawberry gelatin
- 4 medium eggs
- ½ cup water
- ¾ cup vegetable oil
- ½ cup strawberries, diced into small pieces
Directions
- Mix together cake mix, flour, gelatin, eggs, water, oil and strawberries.
- Beat on medium speed for 3 minutes until smooth.
- Pour into two greased 9 x 2-inch round baking pans.
- Bake at 350 for 30-35 minutes.
Cream Cheese Frosting
Ingredients
- At Room Temperature 8 oz package of cream cheese and sticks butter
- ½ bag to ¾ bag of confectionery sugar
- 1 tsp. clear vanilla
- 1 TBS of half-n-half if frosting is too thick (use judgement here).
It’s best if this is close to room temperature or it will cause butter to clump. If your frosting is too sweet, juice half of a lemon and add instead of half-n-half.
Directions
- Mix cream cheese and butter until well blended.
- Gradually add confectionery sugar.
- Add vanilla and half-n-half (or lemon juice). Due to the cream cheese frosting, keep this cake refrigerated. Remove from refrigerator 2 hours prior to serving.
