Downtown Knoxville has a new breakfast and brunch option with the Sept. 12 opening of Flying Biscuit Café at 327 W. Summit Hill Drive SW.
The Atlanta-born restaurant serves breakfast all day, along with brunch and lunch favorites. The 3,428-square-foot downtown café seats about 140 guests and includes a patio and full bar, adding another sit-down breakfast option for downtown workers, residents, students, and visitors.
A second Knoxville location
Owner Chris Compton opened Tennessee’s first Flying Biscuit Café in Turkey Creek in May 2025. The downtown restaurant is his second Knoxville location. Compton, a former University of Tennessee swimmer, chose the Summit Hill site in part for its central location and proximity to UT.
The menu features the café’s signature biscuits and creamy grits, along with eggs, pancakes, French toast, omelets, sandwiches, salads and other breakfast and lunch choices. The downtown restaurant is expected to employ about 30 people.
Breakfast — and more — downtown
Flying Biscuit began in Atlanta in 1993 and has expanded across the Southeast while keeping its all-day-breakfast focus. The downtown Knoxville café also offers catering and Friday and Saturday evening service.
Hours are 7 a.m.-2 p.m. Monday through Thursday; 7 a.m.-3 p.m. Friday through Sunday; and 5-9 p.m. Friday and Saturday. For menus, current hours and additional information, visit Flying Biscuit Café Knoxville.
