Jennifer Aniston Inspired Salad
Some recipes go viral for good reason, and this Jennifer Aniston-inspired salad is one of them. Whether or not it was actually Jennifer’s everyday lunch is still up for debate, but one thing isn’t: this fresh, protein-packed salad has earned its place in kitchens everywhere.
After looking through several versions of the recipe, I noticed they all had one thing in common—they called for cooking quinoa in chicken broth before assembling the salad. While that certainly adds flavor, it also adds time.
As much as I enjoy cooking, I’m always looking for ways to get a delicious meal on the table a little faster. That’s why I started using a microwavable quinoa and brown rice pouch instead. In just 90 seconds, you have the hearty base for this salad without sacrificing flavor or texture. It’s one of those simple shortcuts that makes this recipe easy enough for a weeknight lunch or a quick meal prep session.
The combination of crisp cucumber, creamy feta, fresh herbs, crunchy pistachios, and protein-packed chickpeas makes every bite satisfying. The homemade lemon-honey vinaigrette brings everything together with bright, fresh flavor that tastes like summer in a bowl.
Ingredients
- 1 package of Quinoa and Brown Rice Microwavable Pouch (8.5 oz)
- 15 oz can of chickpeas, drained
- 1 English cucumber
- ½ cup red onion, chopped
- ½ cup fresh parsley
- ½ cup fresh mint
- ½ cup roasted, salted pistachios
- 1 cup feta cheese
Dressing
- ½ cup lemon juice (3-4 lemons)
- ½ cup extra virgin olive oil
- 1 TBS honey
- 1 tsp Nature’s Seasoning
- Fresh cracked pepper to taste
Directions
- Prepare quinoa package according to directions. Pour contents in a bowl to cool completely.
- Prepare dressing.
- Chop all vegetables and herbs and add to a large mixing bowl.
- Add pistachios and feta cheese.
- Toss salad with dressing just before serving.
- Serve immediately or refrigerate 1-2 hours.
Food Fairy Shortcut
Instead of cooking quinoa in chicken broth like many versions of this recipe recommend, I use an 8.5-ounce microwavable quinoa and brown rice pouch. It’s fully cooked in about 90 seconds, cools quickly, and makes this salad something you can throw together in minutes—without giving up the wholesome texture and flavor that make this recipe so popular.
