Some nights, dinner needs to check a lot of boxes. It needs to be quick, easy, filling and—if we’re lucky—leave us with only one pan to wash. This Ground Turkey & Sweet Potato Skillet understood the assignment.

Ground turkey, sweet potatoes, black beans and peppers come together with taco seasoning for a colorful weeknight dinner that’s hearty without feeling heavy. A little Monterey Jack melted over the top and a sprinkle of fresh cilantro finish it off, while salsa and sour cream let everyone dress up their own bowl.

Best of all, everything cooks in one skillet and can be on the table in about 30 minutes. That makes this one worth keeping in your back pocket for those nights when you need to get dinner on the table without making a production out of it.

Ground Turkey & Sweet Potato Skillet

Ingredients

  • 2 TBS Olive Oil
  • 5 LBS Ground Turkey
  • 1 TBS Garlic, minced
  • 1 small onion, chopped
  • 1 yellow pepper, chopped
  • 1 Taco Seasoning Packet
  • 1 ¼ cups chicken broth
  • 1 can black beans, drained and rinsed
  • 3 small sweet potatoes, peeled and diced (about 3 cups)
  • 1 tsp Nature’s Seasoning
  • ½ cup Monterey Jack cheese, shredded
  • ¼ cup fresh cilantro, chopped

Directions

  1. Heat a large skillet and add olive oil. Brown the ground turkey, do not drain.
  2. Add 1 TBS minced garlic, chopped onion and yellow pepper. Cook 3-4 minutes.
  3. Add taco seasoning and 1 ¼ chicken broth. Stir well.
  4. Add black beans. Stir well.
  5. Add sweet potatoes and cover with lid. Cook 12-14 minutes or until sweet potatoes are fork tender. Add 1 tsp Nature’s Seasoning.
  6. Top with cheese and cover over with lid until cheese melts. Add
  7. Serve with salsa and sour cream (optional).

Food Fairy Tips

Let someone else do the chopping. Look for packages of fresh, pre-diced sweet potatoes in the produce section. They’re a great shortcut for a weeknight meal and save you from peeling and chopping three sweet potatoes. You’ll need about 3 cups.

Keep those sweet potatoes small. If you’re cutting your own, aim for roughly ½-inch cubes and keep them fairly uniform. Smaller pieces cook faster and more evenly.

Don’t drain the turkey. Ground turkey is much leaner than ground beef, so there usually isn’t much fat to drain. What little moisture remains helps keep the turkey from drying out.

Make it your own. Monterey Jack melts beautifully, but Pepper Jack adds a little heat, and a Mexican-style cheese blend works just as well. You can also swap the yellow pepper for whatever color you have on hand.

Don’t skip the toppings. Salsa and sour cream are optional, but they turn this simple skillet into something that feels a little more special. Avocado, sliced jalapeños, or a squeeze of fresh lime would be great additions, too.
