Almost every dish labeled “Hawaiian” includes pineapple. Hawaii is famous for its historical and cultural connection to pineapple, once the world’s top producer. Although not native to Hawaii, the fruit was introduced in the early 1800s, and in the early 1900s, James Dole established the pineapple industry. At its peak, Hawaii produced over 75% of the world’s supply. Enjoy this Hawaiian-labeled recipe, and yes, it does include pineapple.
Crockpot Hawaiian Chicken
Ingredients
- 2 LBS of cooked chicken (I use I package of Member’s Mark Rotisserie Chicken Bites)
- 1 cup pineapple juice
- ½ cup teriyaki sauce
- ¼ cup ketchup
- ¼ cup brown sugar
- 1 tsp garlic powder
- 1 tsp ground ginger
- 2 TBS rice wine vinegar
- 1 tsp pepper
- 1 red bell pepper, chopped
- 1 small red onion, chopped
- 1 can of pineapple chunks
Directions
- Prepare sauce by combining pineapple juice, teriyaki sauce, ketchup, brown sugar, garlic powder, ginger, rice wine vinegar and pepper. Wisk until ingredients are blended well.
- Mix the sauce with the chicken and place it in the Crockpot.
- Top with bell pepper and red onion.
- Cook on low for 3 hours. Add pineapple chunks during the last 30 minutes.
Serve over rice and enjoy. This is a great meal prep recipe.
