Book club spurs cooking class

Susan EspirituOur Town Youth, South Knox

Until recently, Tanna Nicely, principal at South Knox Elementary School, had been meeting with a group of girls during their lunch time for book club. Earlier story here.

That was until while they were choosing their next book, a discussion ensued about cooking, and the wheels started turning for a cooking club as well.

So, Dr. Nicely reached out to the UT Extension office and inquired about providing cooking classes during the school day. Now, on Wednesdays, in addition to the book club lunch, Principal Nicely and the girls are students in the Healthy Cooking Class. To date they have made parfaits, trail mix and omelets.

Who knows what creative clubs will come next to this “out-of-the-box” principal.
