Some recipes require careful planning, multiple pots and pans, and a long list of ingredients. Then there are recipes like this BBQ Meatball & Pineapple Bowl—the kind that practically makes itself while you get on with your day.

As much as I enjoy cooking, there are weeks when life gets busy and dinner needs to be simple. That’s when I turn to my crock pot. Few kitchen appliances earn their keep like a slow cooker. Toss in a handful of ingredients, set the timer, and come home to a meal that’s ready to serve.

This recipe is one of my favorite meal prep solutions because it delivers big flavor with very little effort. The sweet pineapple balances the smoky barbecue sauce, while the colorful peppers and red onion add freshness and texture. Served over rice, it’s a complete meal that the whole family enjoys.

Whether you’re feeding a busy family, stocking the refrigerator for the week ahead, or simply looking for a dependable dinner that doesn’t require much attention, this recipe deserves a spot in your rotation.

BBQ Meatball & Pineapple Bowls

Ingredients

  • 2 LBS of Frozen Meatballs
  • 1 bottle (18 oz) of your favorite BBQ Sauce
  • 1 can (20 oz) of canned pineapple chunks
  • 1 small red onion, chopped in large chunks
  • 1 green pepper, chopped in large chunks
  • 1 orange pepper, chopped in large chunks
  • 1 tsp Nature’s Seasoning

Directions

  1. Place frozen meatballs in a crockpot. Use a crockpot liner for easy clean up.
  2. Add 1 bottle of BBQ sauce.
  3. Pour liquid from the pineapple chunks into the BBQ sauce container. Give a good shake to remove all the BBQ. Pour over the meatballs.
  4. Add red onion, green pepper and orange pepper.
  5. Add pineapple chunks.
  6. Add 1 tsp of Nature’s Seasoning.
  7. Cook on high in a Crockpot for 3 ½ – 4 hours.
  8. Serve over rice.
