Here’s why you should eat your vegetables first

A strategy known as ‘meal sequencing’ runs counter to the way people often eat and suggests that the order in which you eat your food can affect blood sugar levels and satiety.

Writing in the Eating Lab of The Washington Post on Oct. 3, Anahad O’Connor recommends eating fiber-rich vegetables, protein or fat at the start of a meal and then eating refined carbohydrates like rice, bread or pasta last. Studies show such sequencing can improve blood sugar levels and stimulate higher levels of hormones that promote fullness and satiety.

The article includes several recipes and detailed information on the research. Tips include eating nuts, especially almonds, first. Then a salad. Avoid “naked carbs,” such as potato chips, mashed potatoes or white bread.

The Eating Lab may be behind a paywall, but it’s worth checking.
